Gijs Dutry van Haeften (OS 2006)

Gijs Dutry van Haeften (OS 2006) has launched his new vegan food business, SLAW. For six months it was a plant-based restaurant in Islington, serving over 6,000 customers. The business is now moving into the ‘grab and go,’ quick service space and will be predominantly focused on the lunch and breakfast market.

‘We are an exciting new plant-based food concept. Our fundamental aim is to make plant-based food more accessible by creating great food, which happens to be plant-based. Sustainability is a big part of our focus as we try and incorporate as much of the vegetable as possible, including parts which would traditionally be thrown away. We aim to be seasonal and do not use refined sugar in any of our foods and most of our dishes do not contain gluten. The majority of our customers are not vegan or vegetarian but see us as a healthy option and are actively trying to reduce their meat consumption and are either flexitarian, omnivores or at least conscious consumers.’
